Twenty-Six Lists - On the Summer Menu

Welcome to Twenty-Six Lists! I hope you'll join me in this simple link-up, where I share a writing prompt for some kind of list, and invite you to share what's on your list. Your list can be very simple or include lots of explanation; short or long; a bullet point list or essay style. Interpret the list prompts however you like, depending on how much time you have to spend, and how much background you'd like to share. 

I need some good meal ideas, so hopefully this week's list will help me out a little, or at least help me think through some of the meals that could be on my menu. The list is all about summer foods, so if you have a favorite dish or simple summery meal, please share it - and a recipe if you can!

On the Summer Menu:

  • anything grilled or smoked! This, to me, is the best thing about summer meal planning. Burgers, hot dogs, steaks, chicken, corn on the cob . . . If we can cook it on the grill or smoker, I'm all for it. In particular . . . 
  •  Kebabs. Usually cooks pretty quickly and everything is bite size already. My favorite is lamb but beef is also really good done in a pomegranate molasses marinade. 
  •  Smoked pork butt and smoked brisket. Two favorites. The slow and low cooking requires a bit of planning ahead, and brisket is not exactly cheap, but these are obvious favorites. We are not in the championship smoke master class, but all the same, we don't go around sharing our rub recipe! haha
  •  Smoked bacon-wrapped meat loaf. Using the grill to smoke a meat loaf really takes it to the next level. I'm not a big fan of meat loaf, but I love this! So I don't have a recipe, but I can kind of describe how I do it. I use half ground beef and half ground sausage and add some chili powder and pork rub along with the seasoning. Form the meat loaf and top with a bit of barbecue sauce and lay a basket weave of bacon strips on top. That's the basics. 
  •  Last week we tried smoking a stuffed pork tenderloin and it turned out really good! My husband thought it was a bit sweeter than he'd prefer but still good. 

Pomegranate Molasses Marinade (for Lamb or Beef)

  • 14 cup pomegranate molasses (not juice)
  • 12 cup extra-virgin olive oil
  • garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 12 teaspoon ground cinnamon
  • 12 teaspoon ground black pepper

Just whisk those together and pour into a ziploc bag, add a pound or so of lamb chunks (or beef) and marinate in the fridge for a few hours. Then thread the meat onto skewers with whatever veggies you like and grill about 5 minutes.

Stuffed Smoked Pork Loin


pork loin roast
kosher salt and barbecue rub
peach or apricot pie filling
fresh spinach

Butterfly the pork loin so you can open it out flat. Sprinkle with coarse kosher salt and let the moisture start to draw, then add a layer of barbecue rub. Spread with pie filling, then spinach leaves. Roll it up like a jellyroll and tie it with butchers twine (this is a two-person job!) Let it sit in the fridge for several hours or overnight, then smoke at about 225 degrees. Baste with melted butter after about two hours.

  1. Oh I am going to have to mention smoked meatloaf to my husband; I bet he'd love that! He's pretty much always smoking something but our favorites are pork butts and brisket too.

  2. I have never thought about smoking a meatloaf! Yum!! My hubby has smoked a turkey and we usually smoke a pork butt. I love a good "cold plate" in the summer - pasta salad, chicken salad or pimento cheese or both, fresh fruit.
